Peanut Butter Cookies

Here's the super yummy peanut butter cookie recipe.

Melt in your mouth, soft and fluffy, peanut butter cookies.



I forgot to take a photo of the ingredients needed. I made these during my Christmas baking frenzy and was doing four things at once. Sorry!

Here's what you need though:
1 stick (1/2 cup) butter or margarine** softened to room temperature
1/2 cup light brown sugar
1/4 cup granulated sugar
3/4 cup creamy peanut butter
1 egg
1 tsp vanilla
1/2 tsp baking soda (soda not powder)
1 1/4 cups all purpose flour.

Start by taking a large bowl and placing your stick (1/2 cup) butter, 1/2 cup light brown sugar and 1/4 cup granulated sugar in it 




Cream those ingredients together. It will look like this:




Next add your 3/4 cup peanut butter and mix well.
Then add 1 egg and mix well.
Then add 1 tsp vanilla and mix well.
It will look like this:




In a separate bowl mix 1 1/4 cups flour and 1/2 tsp baking soda. Mix with a fork to blend and sift.




Add your flour and baking soda mixture to your peanut butter and sugar mixture gradually. I do 1/4 of the mixture at a time.

Here's the "trick". Set in refrigerator for at least 30 minutes.
Preheat the oven to 350 degrees now.




Drop by spoonfuls onto ungreased baking sheet.
Yes, I'm still using my old stained up one.
It's my favorite. Don't judge.




Dip a fork into granulated sugar




Then use fork to press criss cross patterns into your dropped spoonfuls of cookie dough




Bake at 350 degrees for 8-10 minutes.
I always take mine out just before they are completely done.
They will continue to "cook" as they cool for a minute or so.
